  • 500 grams topside beef
  • 1/4 cup soy sauce
  • 2 tablespoons Emelia’s Sweet Serendipity
  • 2 tablespoons Emelia’s Worcestershire Sauce
  • 1 teaspoon mustard powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 tablespoon brown sugar


  1. Begin by semi-freezing your beef to make slicing easier. Once semi-frozen, slice the topside beef across the grain, ensuring no more than 5mm thickness. Set aside.
  2. In a mixing bowl, combine all the marinade ingredients. Mix well.
  3. Immerse the beef slices in the marinade, ensuring each piece is well-coated. Cover with cling wrap and refrigerate overnight.
  4. The next day, set up your dehydrator. Lay the marinated beef strips evenly and dehydrate for 5-7 hours, depending on your desired texture.
