Ingredients:
- 500 grams topside beef
- 1/4 cup soy sauce
- 2 tablespoons Emelia’s Sweet Serendipity
- 2 tablespoons Emelia’s Worcestershire Sauce
- 1 teaspoon mustard powder
- 1 teaspoon smoked paprika
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 tablespoon brown sugar
Instructions:
- Begin by semi-freezing your beef to make slicing easier. Once semi-frozen, slice the topside beef across the grain, ensuring no more than 5mm thickness. Set aside.
- In a mixing bowl, combine all the marinade ingredients. Mix well.
- Immerse the beef slices in the marinade, ensuring each piece is well-coated. Cover with cling wrap and refrigerate overnight.
- The next day, set up your dehydrator. Lay the marinated beef strips evenly and dehydrate for 5-7 hours, depending on your desired texture.
