Indulge in the rich and savory flavours of this Cranberry-Stuffed Luva Duck, perfectly complemented by Emelia’s Ginger & Orange Glaze. This dish is not only a feast for the palate but also a visual delight, making it perfect for special occasions or a gourmet weekend dinner.


  • 1 Luva Duck, washed & dried inside out
  • For the Stuffing:
    • 125 grams sausage mince
    • ½ Cup of Emelia's Cranberry Sauce
    • 2 tbsp dried cranberries
    • 1 tbsp pine nuts
    • 2 tbsp chopped parsley
    • 1 small onion, diced
    • Grated zest and juice of 1 lemon
    • ½ cup dry stuffing
    • Sprinkle of mixed herbs
    • 1 small rasher of bacon, diced
    • 1 egg (for binding)
    • Dash of salt & pepper
  • For the Basting:


  1. Prepare the Stuffing: In a mixing bowl, combine sausage mince, Emelia's Cranberry Sauce, dried cranberries, pine nuts, parsley, onion, lemon zest and juice, dry stuffing, mixed herbs, bacon, and egg. Season with salt and pepper and mix until well combined.
  2. Stuff the Duck: Gently stuff the duck's cavity with the prepared mixture, ensuring it's evenly filled but not overstuffed.
  3. Baste the Duck: Generously baste the outside of the duck with Emelia’s Ginger & Orange Glaze.
  4. Roast the Duck: Place the duck on a rack in an oven dish. Roast in a preheated oven at 175°C. Allow it to crisp up for about 45 minutes.
  5. Second Basting: Remove the duck from the oven and baste again with the Ginger & Orange Glaze. Cover the duck with foil to retain moisture and return to the oven for another 45 minutes or until fully cooked.
  6. Prepare the Gravy: Collect the pan juices, strain, and season with salt, pepper, and a touch of honey. Simmer until you achieve a rich and flavorful gravy.
  7. Serve: Present the duck alongside your choice of roasted vegetables. Drizzle with the prepared gravy and enjoy!
