Ingredients:
1 French stick, sliced on an angle
2 baby cos lettuce, cut in half and washed
8 slices of prosciutto
1/2 cup fresh Parmesan cheese
shaved 4 eggs, poached
Instructions:
- Ensure your eggs are poached and set aside.
- Heat a frying pan and cook your prosciutto until crispy. Set aside on some paper towel, but leave the frying pan on with the leftover fat from the prosciutto.
- Place your slices of French stick in the frying pan and let them brown slightly, soaking up the prosciutto juices. Once the bread has become crispy, remove from the pan.
