Jane's Classic Meatloaf

Indulge in a household classic with Jane's take on Meatloaf. This hearty dish is packed with a blend of flavours that will make your taste buds sing.

Total Time: 1 hour 20 minutes

Ingredients:

  • 500 grams topside beef
  • 1 small onion, finely diced
  • 1/2 red capsicum, finely diced
  • 1 large carrot, grated
  • 1 zucchini, grated
  • 1 handful washed parsley, finely chopped
  • 6 fresh sage leaves, finely chopped
  • 1 rasher bacon, finely diced
  • 1/2 cup creamed corn
  • 500gm sausage mince
  • 1 cup breadcrumbs
  • 1 egg
  • 2 teaspoons Emelia’s Fresh Pickled Garlic
  • 1/2 jar Emelia’s Lincolnshire Chutney
  • Salt & pepper to taste

Instructions:

  1. Preheat your oven to 180 degrees and line a loaf tin.
  2. Combine all ingredients in a large bowl. Using clean hands or wearing gloves, mix until well combined.
  3. Push the mixture firmly into the lined loaf tin.
  4. Bake in the oven for approximately 1 hour or until the meat juices run clear and have no blood when skewered.
  5. Allow to cool for 20 minutes before slicing.
  6. Serve with a traditional meat & 3 veg dinner or have with extra Lincolnshire Chutney the next day as a sandwich.

Tips and Tricks:

  • For a different flavour profile, you can substitute the sausage mince with ground turkey or chicken.
  • If you prefer a spicier meatloaf, feel free to add some chili flakes or hot sauce to the mix.
