Experience a burst of flavors with this Fresh Squid Salad with Rocket & Emelia's Garlic Aioli. A perfect blend of fresh ingredients and Emelia's signature sauce, this recipe is a must-try for seafood lovers.

Ingredients:
- 400 grams fresh rocket leaves
- 1 cup red capsicum strips
- Shaved slices of green cucumber
- 4 red cherry tomatoes
- Rings of red Spanish onion
- 2 tablespoons garlic and chilli oil
- Sea salt to taste and ground black pepper
- 125 ml lemon juice with zest
- 1 bulb fresh garlic
- 8 fresh calamari / squid tubes, cleaned and cut in 3 cm pieces
- 1 medium red chilli, finely chopped
- 1 tablespoon finely chopped parsley and dash of sweet paprika
- Emelia’s Magic Salad Dressing
- Emelia’s Garlic Aioli
Instructions:
- To marinate the squid, combine all ingredients except rocket in a bowl. Let it marinate for up to 3 hours.
- Preheat a heavy-based grill pan until hot. Drizzle a little garlic and chilli oil, then cook the squid in small batches until just turned in colour, about 2 minutes on each side. Set aside and keep warm.
- In a separate bowl, mix all salad ingredients (except for rocket) with a little garlic and chilli oil, and Emelia’s Magic Salad Dressing.
- Arrange rocket on 4 white dinner plates, top with the mixed salad, then the hot squid pieces. Drizzle with garlic aioli and decorate with thin slices of freshly sliced chilli.
- Serve immediately. The flavour of Magic Salad Dressing combined with the aioli is superb.
