Easy Soda Water Batter for Crispy Fish & Chips!

Ingredients:

  • 1 cup plain flour
  • 1 cup soda water (cold)
  • Salt to taste
  • 500g fresh fish fillets (like snapper or whiting)
  • Extra flour for dusting

Method:

  1. In a bowl, whisk together flour, soda water, and a pinch of salt until smooth. The soda water should be cold to keep the batter light and crispy.
  2. Dust the fish fillets with a little flour to help the batter stick.
  3. Dip each fillet into the batter, then fry in hot oil (around 180°C) until golden and crispy.
  4. Serve with your favourite chips and, of course, Emelia’s Crustacean or Tartare Sauce on the side!
