Ingredients:
- 1 cup plain flour
- 1 cup soda water (cold)
- Salt to taste
- 500g fresh fish fillets (like snapper or whiting)
- Extra flour for dusting
Method:
- In a bowl, whisk together flour, soda water, and a pinch of salt until smooth. The soda water should be cold to keep the batter light and crispy.
- Dust the fish fillets with a little flour to help the batter stick.
- Dip each fillet into the batter, then fry in hot oil (around 180°C) until golden and crispy.
- Serve with your favourite chips and, of course, Emelia’s Crustacean or Tartare Sauce on the side!
